Lemon Bars

Crust Ingredients:

  • 1 3/4 Cups All Purpose Flour
  • 1/4 Cup Cornstarch
  • 1/2 Cup White Sugar
  • 1/4 Teaspoon Salt
  • 1 Cup (2 Sticks) of Butter

Crust Directions:

  1. Line a 9x13 baking dish with foil & spray with non-stick cooking spray.
  2. Whisk together flour, cornstarch, sugar, and salt.
  3. Cube the butter and cut it into the flour mixture until crumbly and coming together.
  4. Press the dough into the baking dish in one flat layer.
  5. Bake at 350°F for 20 to 25 minutes until slightly golden brown.

Filling Ingredients:

  • 1 1/2 Cup White Sugar
  • 1/4 Cup Flour
  • 4 Large Eggs
  • 1/2 Cup Fresh Squeezed Lemon Juice

Filling Directions:

  1. Whisk together flour and sugar. Add eggs and lemon juice until combined.
  2. Pour the filling over the crust and put it back in the oven.
  3. Bake at 350°F for about 20 minutes or until the filling is set. Let it cool, then you can refrigerate.
  4. Sift powdered sugar on top.

Tip: Use a damp knife to cut the bars to avoid sticking, enjoy!
